Abstract

Method for producing a legume-based food product, comprising the steps of: providing an amount of seeds belonging to at least one legume species; steam-cooking said amount of seeds; drying the seeds that have been previously steam-cooked; grinding the cooked, dried seeds, thus obtaining a flour; mixing the flour with water, thus obtaining a dough; extruding the obtained dough; drawing and cutting the extruded dough, thus obtaining a crude product; processing the crude product by means of a shaker pre-dryer; drying, by means of a dryer, the processed crude product, thus obtaining a legume-based food product.
