Abstract
The subject matter of the invention is a gluten-free grain concentrate (GFGC) product and stepwise process to prepare GFGC from the treatment of raw unground wheat germ, is provided which permits said wheat germ to become a food which is the source of biologically active constituents in a cost effective matter.The process results in the direct production of a gluten free grain concentrate that substitutes for other fermented wheat germ products.
