Abstract

A method for manufacturing solid particles from a liquid or semi-liquid or pasty food composition, according to which the following measures are implemented: - A rotary chopping device ("cutter") is provided, provided with a bowl (1) and chopping knives (2), capable of receiving the composition to be treated; - A cryogenic liquid, preferably liquid nitrogen, is supplied to the interior space of the bowl using a delivery pipe having at least one projection nozzle (3) at its end; the diameter of the pipe and the projection nozzle being such that the cryogen is brought to a pressure less than or equal to 1 bar and to a speed in the range from 0.5 to 1.5 m/s.
