Abstract

Sesame plants with high protein content and/or improved taste, as well as seeds thereof and food products made therefrom are provided. Phenotypic and genotypic analysis of many sesame varieties were performed followed by analysis to derive markers for phenotypic traits that contribute to high protein content and/or improved taste, and a breeding simulation was used to identify the most common and most stable markers. Following verification of trait stability over several generations, markers and marker cassettes were defined as being uniquely present in the developed sesame lines. Various food products made of seeds of the disclosed varieties have higher protein content and improved taste compared to products made of commercial sesame varieties.
