Abstract

The present disclosure provides a method for manufacturing an environmentally friendly syrup suitable for use in the production of fermented beverages and foods. The method comprises steeping solid ingredients in water to form a mixture comprising a liquid sugar solution, extracting the liquid sugar solution from the mixture, and concentrating the liquid sugar solution. The solid ingredients comprise malted cereal grains and at least 50 wt% bread. This method repurposes waste bread, reducing environmental impact and costs in beverage production. The resulting syrup has a high percentage of fermentable sugars and can be used as a companion syrup in brewing, offering a sustainable alternative to traditional brewing ingredients while maintaining desired fermentation characteristics.
