Abstract

The present invention relates to a sweet spread of adjustable water activity (Aw), suitable for use in sandwich-type products ready for consumption with a shelf life of at least 15-25 days. The spread comprises, among others, a sweetener, water in emulsified form trapped in the sweetener, nut paste and starch, so as to have an Aw of 0.89-0.91, preferably 0.90 +/- 0.03 and a particle size of 20-30µm, preferably 20µm. The invention also relates to a method of preparing the spread, which through pasteurization and mechanical processing of the liquid phases of the ingredients achieves its emulsification and stable mixing with the lipophilic phase, thus adjusting the Aw and giving the produced spread a smooth and cohesive structure with a long shelf life.
