Abstract

The present invention concerns a bread carré (self-sealed sandwich of special technical and quality characteristics) with a sweet filling, ready to eat, with a long shelf-life at room temperature. The bread square consists of two slices of bread without crust, inside which one or more sweet fillings are placed. A sealing zone is defined around the perimeter of each slice of bread. To seal the bread square, the two sealing zones are pressed so that they are plastically deformed and, due to the water contained in the bread, they are irreversibly secured. The stability of the seal is ensured by the use of fresh bread without crust, the matching of the water activity (Aw) of the bread and the sweet filling, the absence of sweet filling between the sealed sealing zones, and the three-dimensional shaping in one or both slices of bread, a cavity in which the sweet filling is contained without leaking. Further improvement of the seal is achieved by removing air pockets between the surfaces of the bread carré materials.
