Abstract
The present invention relates to microgel compositions comprising about 1.0 wt% to about 15 wt% RuBisCO protein and water or a plant-based milk. Further, microgel emulsion compositions are described. The microgel compositions and microgel emulsion compositions according to the present invention can be used in the preparation of dairy analogues, in particular acidified dairy analogues such as yogurt. The present invention further relates to the method of preparation of such compositions.
