Abstract
The present invention relates to a method of extracting glycosylated proteins from dairy stream, said method comprising the step of precipitating the glycosylated proteins of the dairy stream so as to obtain a protein concentrate by mixing a dairy stream with ethanol, thereby obtaining a dairy stream-ethanol solution wherein the ethanol concentration in the dairy stream-ethanol solution is of from 20% to 60% v/v, and wherein the glycoproteins represent at least 30% w/w of the concentrate.
